The 1SharpKnife Process
1SharpKnife's goal is to place a great cutting edge on your knife, using equipment and
techniques that does not damage the blade, or remove excess metal.

1SharpKnife studied not only how to sharpen a knife, but what makes a knife sharp.  Instead of  
just learning how to use a piece of equipment, the principles of sharpening were learned, so
that a variety of methods could be utilized to sharpen your knife.  Equipment is used that is
designed for knife sharpening.  It not only protects the knife, but works to insure that no more
metal than necessary is removed during the sharpening process.
Kitchen knives and Japanese Style kitchen knives,  are no longer sharpened.  
1SharpKnife specializes in sharpening folding (pocket) knives, fixed blade knives used for
hunting / fishing / camping, and military / tactical style knives - including those used by police,
fire, and rescue personnel.  Japanese pocket and hunting knives are sharpened.
Here is the knife sharpening process used by 1SharpKnife:
  • The knife is inspected:  The knife is checked for straightness, damage, and current
    condition.
  • Repairs are made:  Equipment is available to repair broken tips, cleanup cosmetic
    issues, lower bevel angles and/or restore blade shape if needed.
  • Each knife is uniquely and individually sharpened:  Each knife is evaluated and given a
    bevel and level of finish specific to the knife, and on equipment that best suits the
    intended purpose.  Also, each knife is sharpened one at a time, from start to finish.
  • Knives are sharpened and not just "re-edged":  Bevels are established, then the
    appropriate edge is placed on the knife.
  • Equipment used:  1SharpKnife uses a variety of equipment for sharpening
    including the:  Edge Pro - Professional Sharpener, Tormek Wet Wheel
    Sharpener, Hamaguri Knife Sharpener, Razor Sharp Edgemaking System, and
    Waterstones.  Other equipment is available for repairs as needed.  1SharpKnife
    does not use high speed grinders or any "pull thru" type sharpening device.
  • Final edge inspected and tested:  The edge is examined under magnification, a test
    slice thru paper or other medium is performed and the edge is checked with a "Razor
    Edge - Edge Tester".

There is more to knife sharpening than just placing an edge on a knife.  Several factors
are involved.  These include:
  • Edge angle:  This affects how durable the edge is.  1SharpKnife places an edge angle
    that is often lower than "factory new", yet still very durable.
  • Level of finish:  this affects how the blade performs.  A more coarse finish will slice
    better, a polished finish will push cut better.  1SharpKnife typically places a finish that
    favors a polished edge, but with a bit of "tooth" for slicing ability.
  • Type of edge:  this also affects the edge strength.  Knives that see harder use than a
    kitchen knife need a different edge.  1SharpKnife typically uses one of two types:  a
    convex edge or a dual bevel flat edge.

What 1SharpKnife DOESN'T do....
  • Use a "pull thru" type sharpener:  Many of these sharpeners have two fairly small rotating
    wheels that are offset.  These sharpeners typically put a thin, hollow ground edge on the
    knife that may be satisfactory for kitchen knives, but is not well suited for other types.  The
    wheels are also offset, which means a small area at the heel and tip (which is usually the
    most used area of a knife) are not properly sharpened.
  • "Cookie cutter" sharpening:  1SharpKnife has a variety of methods to sharpen your knife.  
    A small 3in. pocket knife should be and is sharpened differently than a large fixed blade
    tactical knife.  Each knife is uniquely sharpened and is checked to insure the method
    used puts on the best edge possible.

If you have an issue with your knife...
  • Based on the above information, you can see that adjustments can be made based on
    how your knife currently performs.  If a knife sees fairly light use, and would benefit from
    being sharper adjustments can be made.  On the other hand, if the knife sees fairly hard
    use, and is quickly dulling or even chipping or otherwise failing, this can also be
    accommodated.  Simply indicate in the comments or enclose a note when you send in
    your knife or knives.

service you receive...
  • 1SharpKnife will refund the cost of sharpening, minus actual shipping charges.
  • 1SharpKnife reserves the right to resharpen the knives, in lieu of a refund.
1SharpKnife reserves the right to refuse service to any person, company, or organization.
